In Okinawa, it is often said that "Okinawans eat everything from a pig except its squeal." That's how essential pork is to the Okinawan diet.

We enjoy every part of the pig, from pork belly (sanmainiku) and trotters (chimagu/tebichi) to ears (mimiga) and face (chiraga), and even offal (nakami). Okinawan soba broth is also made from pork and pork bones, and while not a dish, chinsuko (a type of Okinawan cookie) actually uses lard (pork fat).
